This weekend marked the second weekend in a row with virtually no plans, and I was pretty happy about it. Last weekend was about doing nothing, this weekend was about tackling projects! On Saturday afternoon I decided to go to the store just for a few things, but ended up filling my cart thinking of new recipes. I have NOT been cooking for months, so this was a big deal.
This meal was one of my first recipes that I have ever made up. Yep, all by myself. Of course there were things I would change, but it was worth a shot.
Sweet Potato Black Bean Pepper Jack Enchiladas
- 2 cans of enchilada sauce
- 5 flour tortillas
- chopped green onions
- 1 sweet potato
- 1 cup of black beans
- 1 cup pepper jack cheese shredded
- 1 cup of spinach chopped
- 1 tbsp garlic
- 1 tbsp tony’s creole seasoning
- 2 tablespoons oil
1) Set oven to 350. Finely chop of sweet potatoes and toss with olive oil and tony’s. Place on a baking sheet and roast for 30 minutes. I also made rice during this step.
2. Mix together cheese, spinach, garlic, green onions, black beans in a bowl.
3. In a small baking dish, cover the bottom with enchilada sauce. Create an enchilada rolling station and also put a little enchilada sauce on the bottom of that. Add sweet potatoes to the cheese mix and scoop about 3/4 cup of mix into the tortillas. Roll up and place in your dish.
4. Place all enchiladas in the dish and COVER with sauce. I like to put foil on top to keep the moisture in. Bake for 45 minutes and cover with cheese!

After months of hard work, the boys opened up for good. It’s amazing to watch your husband go after his passion. Bryan has been working hard on getting his recipes where he wanted them, perfecting the smallest details. Together with his partners, they have opened up a pretty amazing space.
Last week we celebrated at The Populist for their first annual holiday party. Again, our food and drinks were amazing. We all sat around the table and told stories from the past year. So much love and labor has gone into OMF. Wonderful to sit and reflect.

Remember my goal for monthly date nights with Bryan? Well we made this happen in December!
Bryan and I had a lot to celebrate this month. Bryan and the boys finally opened up Our Mutual Friend Malt & Brew. They are open for good now and everything was kicked off on Friday. About a year of hard work went into OMF, and I couldn’t be more proud. The second thing we needed to
celebrate was my new job. I am moving positions in January to a new agency and will solely work on the digital side of things.
I’m very excited!
We went down to Tom’s Urban 24, a new restaurant at Larimer Square that I had wanted to try. Our food was good, but we cared much more about spending time together and reflecting upon the last year. 2012 was a challenging year for us, but I am thankful that we came out stronger and more prepared for the future.
In the middle of dinner it began to snow outside. After weeks of warm weather, it was so welcomed. If you have been to Larimer Square in Denver, you know why this was magical. I compared it to Main Street at Disneyland. Big fat flakes came down from the night sky and everyone was staring up and the sky with smiles. After we went outside for some coffee, we got back in the car and went out to a movie.
A great night, and a great reminder that I married a wonderful man.
Hope everyone had a wonderful Thanksgiving. I feel so blessed just to have some days off. Yesterday was amazing and a record! Everything was cooked and ready to go by 12:30pm. It was the earliest Thanksgiving ever. I made a traditional Thanksgiving dinner (lunch) in the tradition of my Grandma McCabe. Katie joined us and after the meal we watched some football and saw a movie.
It was our 2nd Thanksgiving in our new home and I am looking forward to every year getting better and better.

Our very dear friends have opened up quite the establishment. The Populist is a new restaurant at 32nd and Larimer here in Denver. It’s been months and months in the making and I so happy that they are finally able to open.
Last weekend Bryan and I were invited for a tasting and we were blown away. We shared a 7 course meal and sampled their unique cocktails and wine menu. Everything about this restaurant is unique from the menu to the decor. The thought and careful planning was well worth the wait. You are surprised with every dish. For example, the apple and parsnip soup with roasted jalapeño caviar and aleppo flakes- to die for!
It feels so amazing to walk to Larimer and see the business that are springing up. I am amazed by the people that I know. If you are in Denver, you MUST put this on your list of places to try. I am so
excited that they are finally open and know that they will be quite a sucess!
