Right now, I am looking outside my window to snow. Instead of April showers bringing May flowers, it’s looking like it is going to be April slush & snow. However, I know Spring is still technically here and warmer weather is just around the corner. I’ve been browsing online daydreaming of walking my dogs in the park enjoying the sunshine. A few weeks ago my friends Emily, Lashley, Melissa and I joined Lexy from The Proper Pinwheel and Erin from artsocial for a night of crafts at West Elm. The ladies put on a great night and we met so many great local bloggers.
All of the ladies personalized their lanterns using cut tissue paper. We worked away on our paper lanterns and I impressed myself by making a beautiful ombre one. I am excited to find the perfect spot for it, but I haven’t quite found it.
We were also given great bags full of craft supplies that have been sparking my imagination for new projects. Hopefully this means I will update more.
Lately I have been browsing trying to find a good vintage clock for my home. I have been searching all over etsy for the perfect one. I am mostly interested in a vintage school clock. I actually hate the sounds of clocks, but I am hoping having it in the living room won’t annoy me as much as in a bedroom. I have found some great wall clocks on etsy and wanted to share for window shopping wednesday.

This weekend marked the second weekend in a row with virtually no plans, and I was pretty happy about it. Last weekend was about doing nothing, this weekend was about tackling projects! On Saturday afternoon I decided to go to the store just for a few things, but ended up filling my cart thinking of new recipes. I have NOT been cooking for months, so this was a big deal.
This meal was one of my first recipes that I have ever made up. Yep, all by myself. Of course there were things I would change, but it was worth a shot.
Sweet Potato Black Bean Pepper Jack Enchiladas
- 2 cans of enchilada sauce
- 5 flour tortillas
- chopped green onions
- 1 sweet potato
- 1 cup of black beans
- 1 cup pepper jack cheese shredded
- 1 cup of spinach chopped
- 1 tbsp garlic
- 1 tbsp tony’s creole seasoning
- 2 tablespoons oil
1) Set oven to 350. Finely chop of sweet potatoes and toss with olive oil and tony’s. Place on a baking sheet and roast for 30 minutes. I also made rice during this step.
2. Mix together cheese, spinach, garlic, green onions, black beans in a bowl.
3. In a small baking dish, cover the bottom with enchilada sauce. Create an enchilada rolling station and also put a little enchilada sauce on the bottom of that. Add sweet potatoes to the cheese mix and scoop about 3/4 cup of mix into the tortillas. Roll up and place in your dish.
4. Place all enchiladas in the dish and COVER with sauce. I like to put foil on top to keep the moisture in. Bake for 45 minutes and cover with cheese!

This weekend while I was waiting for a new tire I found myself with no internet and a laptop. I turned the boring time into an hour to get organized and ended up creating a quick little shopping list template. Wanted to share with anyone who wanted it.
